With a particularly fruitful apple crop this year, I’ve had to be very creative with baking and preservation. I think I’ve got every apple variety known to humankind since I just keep adding trees to the farm every few years. I’m not complaining, just on overdrive thinking of ways to use up all those delicious fruits.
My long time fave is apple cake from a recipe that has been passed down from who knows where. Trust me, you will love this one. And just remember―I am not a recipe developer but merely an inspirer.
🍎Fresh Apple Cake 🍏
4 c. diced apples
2 c. sugar
1/2 c. chopped nuts
2 c. flour
2 eggs
1 tsp. cinnamon
1/2 c. oil
2 tsp. soda
1 tsp. vanilla
3/4 tsp. salt
Peel and dice apples, break eggs over apples and mix with fork. Add sugar, nuts, cinnamon and oil.
Sift salt, soda, and flour and add to mixture.
Grease and flour a 9X12″ pan. Bake about 50-55 minutes at 350° or until knife comes out clean.
Tortue du Soleil Update
Great news for all you Kindle/eBook readers–edits are final and Tortue du Soleil will be available in the next few weeks.
Besides being available on Amazon, Tortue du Soleil is also available at Capital Books downtown Sacramento, K Street, as well as Tom’s Used Book Store downtown Lodi. I am working on a collaboration with a new book store opening in Ripon and will post more info as we figure it out.
And I have some very exciting news—Tortue du Soleil finally made it through French customs and will soon be available in the airport on Tahiti and Vaima Shopping Center, downtown Papeete where the stories take place. 💙🌴🐢☀️
